Nevertheless, the duration of cooking time varies because there are some factors that you should consider such as thickness of the meat, the distance of the meat from the fire or heat loss due to opening the lid often. You may add more seasoning or sauce onto the meat while smoking to make the outer part of the brisket moist and juicy.

Finishing

When the meat is perfectly cooked, you may now place it in a chopping board and let it rest for a few minutes so that you won't burn your hands. Using a sharp knife, cut a small portion of fat at the top part and check the direction of the meat's grain. When you are able to locate the direction, you may now slice the meat against the grain.
